Taco Rice Skillet

Is it just me, or do you guys like to experiment with new recipes in the fall as well? For some reason when this time of the year comes around, I get a little more into my cooking. Must be the cold weather...makes you want to EAT! ;) This delicious recipe is another easy, quick and healthy dinner choice for you all to try. I found this on Pinterest and it was an absolute hit! When everyone gets seconds, you know it was a good meal ;)

I've made this twice within the last week or so, it's that yummy! Like the last recipe I shared, it takes less than 30 minute to whip up. Not only is it quick, but it is super easy and super healthy! Packed with protein and veggies and low on the carbs, who doesn't like that?! I tweaked the original recipe just a bit, but not much. Mainly it was preference stuff. You can use either ground beef, ground turkey, or ground chicken. Personally I always go with ground turkey, just because it's healthier, but either one would taste delicious! This time I had to go with ground beef because the store ran out of ground turkey (sad day) Also, along with the cheese that is already added to the recipe, I added some extra farm-style cut mozzarella from Tillamook. HAVE YOU GUYS TRIED THIS STYLE YET?! Can you say life changer? It's amazing and definitely my new favorite!



Here is what you will need:

  • 1.5 lbs ground beef, turkey, or chicken (I usually always go with ground turkey!)

  • 1 onion, chopped

  • 2 tsp cumin

  • 2 tsp onion powder

  • 1 tsp brown sugar

  • pinch of salt

  • 1 can black beans, drained + rinsed

  • 1 can Rotel diced tomatoes + green chiles

  • 1 can corn

  • 1 cup uncooked white or brown rice

  • 2 cups beef broth

  • 1 1/2 cup shredded colby jack cheese

  • Tortilla chips

  • Olives

  • Lettuce

  • Cilantro (optional, but delicious)

Here is what you do:

  1. First, cook the ground meat of choice and onion in a large skillet over medium-high heat. Break up the meat until it is in crumbles and cooked fully through. Drain any excess fat and return to the skillet.

  2. Next, add all seasonings and stir together until fully combined.

  3. Next, stir in the beans, Rotel, corn, uncooked rice, and beef broth. Bring to a boil, and then reduce the heat to medium-low. Cover with a lid and let simmer for 25 minutes or until rice is cooked. When the time is up, add the cheese!

  4. Serve it up and add whatever toppings you desire! I chose to go with crushed up tortilla chips, black olives, and lettuce. I didn't have any cilantro, unfortunately, but if I did you know I would be all over that! Next time I make this, I'm going to add bell peppers into the mix, and then make some homemade guac to go on top!

For a sauce, I went with a new honey mustard I just bought. Salsa or Thousand Island would also work terrifically! Seriously though, I am obsessed with this recipe. It makes perfect leftovers and could also be used to meal prep! It is also a fun recipe to play around with. You can add all kinds of things to it. I was thinking next time of adding some chili powder for some extra spice!
