Hey everyone! I hope you all are finding ways to stay busy and not go insane while we are sheltering in place, lol. If any of you are like me, you've been busy in the kitchen! As most of you have seen on my Insta Stories, I've turned into the Cookie Monster, lol. So far I've made chocolate chip cookies twice and then chocolate oat crispies. All of which are officially gone, lol.
I'm making dinner tonight and thought I'd share this incredibly easy recipe with you all! Seriously, this recipe and fool proof and honestly might be too plain and boring for some of you, lol but it is one of Jeremy's favorites and such a yummy meal to make. I got this recipe from my mama while in college and have kept it ever since :)
This recipe can be done two different ways. One would be shredding up baked chicken breast and then adding it to the mixture OR getting a fully roasted chicken, stripping it and adding that chicken to the mixture. Either way is delicious, just depends on what you have at home! For tonight I just have chicken breast which I am baking and going to add :)
Here is what you will need:
- White Beans (4 Cans)
-Chicken Broth or Bone Broth (4 Cups)
-Chicken Breast (Honestly as much as you prefer, I added 4 breasts - shredded)
-16oz. Medium Chunky Salsa (I use Pace)
Rinse off bean and then add beans, chicken broth and salsa into Crockpot and set on High.
Bake chicken at 425 degrees for 20-25 min. until fully cooked.
Remove chicken from oven and place in large mixing bowl.
With a hand mixer, shred chicken until completely shredded. **If you have not yet tried this technique with shredding chicken YOU ARE MISSING OUT!** If you do not have a hand mixer, you can shred the chicken with forks.
Add chicken to Crockpot and let it heat up for another 20 min.
Garnish with sour cream, tortilla chips or nothing! And then enjoy :)
And boom! You have yourself a delicious pot of White Chili Chicken. Like I said, FOOL PROOF! It is healthy, easy and delicious! Hope you enjoy and let me know if you give it a try :)
